Keto Pumpkin Cheesecake

Ingredients

-FILLING-

2/3 tsp. sugar substitute

16 oz. cream cheese

1/2 tsp. vanilla extract

2/3 cup pumpkin puree

2 large eggs

1 tsp. pumpkin spice

-CRUST-

1 3/4 cup almond flour

1/2 tsp. cinnamon

3 tsp. sugar substitute

1/2 cup butter

Directions

  1. Mix together almond flour, cinnamon, and sweetener in 9-inch pie pan.
  2. Stir in melted butter.
  3. Press mixture down into pie pan with hands.
  4. In large mixing bowl, combine cream cheese, sweetener, and vanilla extract with electric mixer until smooth.
  5. Blend in the pumpkin spice, pumpkin puree, and eggs until well combined.
  6. Pour pumpkin cheesecake filling into prepared crust. Bake at 350ºF for 35-40 minutes or until filling is set.
  7. Allow cheesecake to cool on rack. Then, chill in refrigerator for several hours or overnight before serving.

Keto Herbed Biscuits

Ingredients

½ cup coconut flour

2 Tbsp. almond flour

2 tsp. cream of tartar

1 tsp. baking soda

3/4 tsp. salt

1/2 cup cold salted butter, cubed

1/4 cup chopped fresh parsley

1/4 cup chopped fresh green onions

5 eggs

1/2 cup milk

Directions

  1. Preheat oven to 450ºF.
  2. In a large bowl, whisk together coconut flour, cream of tartar, baking soda, and salt.
  3. Combine cubed butter with mixture until crumbly. Sprinkle with parsley and chives.
  4. In a separate bowl, whisk egg. Remove and set 1 Tbsp. aside for glaze.
  5. Whisk in milk. Pour over dry ingredients, tossing with fork to create dough.
  6. Let dough sit for about 5 minutes.
  7. Line a mini loaf pan or muffin pan with appropriate liners. Fill the mini loaf liners halfway with the batter.
  8. Bake for 12 minutes or until a toothpick can be inserted and it comes out clean.
